Homemade Tomato Soup with Grilled Cheese Sandwich

Fall weather calls for soup season. I decided to make my first ever tomato soup with grilled cheese sandwich! I am going to share how I made these but as always I never share the exact amount. Ya’ll have to taste it and tweak it to your liking.

Tomato Soup

Ingredients:

Onion

Celery

Garlic

Tomatoes (I used can crushed tomatoes because I had work)

Chicken broth (I found a halaal one at the local meat store)

Basil

Salt

Black Pepper

Cayenne Pepper

Garlic powder

Paprika

Celery Salt

Thyme

Sugar (key ingredient)

Grated Parmesan Cheese

Heavy Cream

 

Directions:

I started by dicing the celery, slicing the onion, and roughly chopping a few garlic cloves. In a sauce pan, I heated olive oil and to this I added the onions and celery and sauteed them for a few minutes. Next, I added the garlic cloves. Make sure to not burn the garlic. On low heat, I added my spices: black pepper, celery salt, garlic powder, paprika, and cayenne pepper. Then, I poured the crushed tomatoes. After that, I added grated parmesan cheese along with basil. I kept stirring while adding all these ingredients. I didn’t want to leave the stove because I was too afraid of the soup burning. The key ingredient is to add sugar in order to balance the acidity of the tomatoes. You can use white or brown sugar. I used white sugar. I also sprinkled some salt with the sugar and stirred some more. Taste and tweak. Add spices to your liking. If you are content with the taste, pour the chicken broth in. Pour according to how thick you want it. It’s time to blend the soup! You can use a hand blender or a regular blender. If you choose to use a regular blender make sure to be very careful since you don’t want an explosion happening all over your kitchen, and I recommend blending it in batches. Pour the heavy cream and keep stirring. Add anymore spices you want. Taste and tweak!

It’s ready to serve. Garnish it with fresh basil and serve it with croutons 🙂

 

Grilled Cheese Sandwich:

Ingredients:

White Bread

Mayonnaise

Thyme (any spice works; can use parsley. I had thyme)

Cheese (your favorite cheese; I had American and grated Parmesan cheese)

 

Directions: 

Grilled cheese sandwich always goes well with tomato soup.  I heard that using mayonnaise instead of butter tastes really good. Guess what?! It’s true!! Spread mayonnaise on the bread and add thyme. Use your favorite cheese. I used American and shredded cheese. This was honestly so delicious. You have to try it for yourself to know what I mean!
