Infamous Cold Pasta

Cold Pasta is my personal favorite dish to make during the holiday season. It’s easy, fast, and delicious for everyone to enjoy! The best part is that you can make it a night before!!

Ingredients:

– Tri-color Rotini pasta

– bell peppers (red, green)

– chicken (boneless thigh pieces, chopped)

– turkey bacon (chopped)

– walnuts (chopped and roasted)      (optional)

– red onion (diced)

– olive oil

– Ranch- thousand island

– chopped garlic

– Salt, pepper, spices (whatever you like)

Recipe:

First, chop and season your chicken. I prefer boneless thigh over the chicken breast because it’s more flavourful. I marinade it with ginger/garlic paste, salt, pepper, cumin powder, and cayenne pepper. Let sit for a few minutes.

Next, boil the pasta.

While the pasta is boiling, in a non stick stir-fry pan heat 2-3 tablespoons of olive oil. In the oil add the diced red onion and sautée the onions. Add the chopped ginger. Add the chopped chicken and fry it. Add the bell peppers.

While this is cooking, in a separate non stick pan fry the turkey bacon. After frying chop it into pieces and set aside.

After the turkey bacon is done, in the same pan, roast the walnuts. Chop when done.

When the chicken mixture is done, add the pasta to it. Then add the turkey bacon and roasted walnuts. Fold the pasta in and let cool for 15-30 minutes.

Now, add your ranch to the pasta mixture. Let it cool for a bit longer. Then refrigerate it overnight.

Serve it cold the next day. Bon Appétit 😊
